Iced Butterfly Pea Matcha Latte
Green matcha below, a soft light-blue butterfly pea milk on top — a two-tone iced latte that looks a little like a glass of blue sky over green hills. All color, no dye: just matcha and butterfly pea flower, each doing their own thing in one glass.
- Iced
- 1 serving
- Ready in 5 minutes
This is the two-color drink that keeps showing up on everyone's feed for a reason: vivid green matcha at the bottom, a soft light-blue butterfly pea milk floating on top. Blue over green, sky over grass — if it reminds you of a certain desktop wallpaper, that's exactly the idea.
What makes it work is that both colors are real. The green is our Everyday Matcha 003; the blue is our butterfly pea flower powder. Two powders, two natural pigments, zero artificial coloring — layered over ice so they stay separate until you decide to stir.
Blue Sky, Green Hills — In a Glass
The whole look comes from layering two natural colors that don't want to mix. Here's what makes the two tones sit cleanly on top of each other.
Two Real Colors, No Dye
The green is everyday matcha, the blue is butterfly pea flower — both milled from the plant itself. You're layering two natural pigments, not food coloring, so the color holds up in the glass and tastes like what it is.
Ice Keeps the Layers Apart
A glass packed with ice does the heavy lifting: the matcha settles into the bottom, and the lighter butterfly-pea milk floats on top when poured slowly. It stays two-tone until you stir it into a soft green-blue.
How to Make an Iced Butterfly Pea Matcha Latte
Whisk each color separately, build green over ice and milk, then float the blue on top and slow-pour to keep the two tones clean.
MATCHA
BUTTERFLY PEA POWDER
WATER
60 ml · 80-85°C
MILK
150-180 ml
ICE
As desired
SWEETENER
Optional · honey or syrup, to taste
- Whisk the two colors separately. Sift 3g matcha into one bowl and 1g butterfly pea powder into another. Add about 30ml hot water (around 80-85°C, never boiling) to each and whisk until smooth. You'll have one bright green cup and one deep blue cup.
- Build the green base. Fill a glass with ice, then pour the whisked matcha over the top. This is your green "hills" layer.
- Make the light-blue sky milk. Stir the butterfly pea into your milk until it turns an even, soft light blue. The deep blue lightens into a gentle sky tone once it hits the milk.
- Float the sky on top, and serve. Pour the light-blue milk slowly over the back of a spoon so it floats on top of the matcha as a distinct band of blue — your "sky" over the green. Leave it layered for the two-tone look, or stir into a soft blue-green latte. Sweeten to taste if you like.
Why We Like This Recipe
It's the rare drink that's as fun to look at as it is to drink — two natural colors stacked in one glass, no food coloring anywhere. The green carries real matcha flavor; the blue is nearly flavorless, there mostly for the color, so the latte still tastes like matcha with milk.
And it's a good excuse to keep both powders on hand. Matcha for the green, butterfly pea for the blue — the same two tins make color-changing lemonades, layered kombucha, blue lattes, and this. One glass, two of our favorite powders, doing what they do.
