  1. Build the lemon-honey syrup. In the bottom of your glass, stir 15ml lemon juice with 15g honey until fully dissolved into a thick, concentrated syrup. This is the anchor layer โ€” the denser it is, the better it holds everything poured on top instead of letting it sink through.
  2. Pack the glass with ice. Fill the glass to the top with ice. The ice isn't just for chilling โ€” it acts as a physical barrier between the syrup below and the kombucha you're about to pour, which is what keeps the layers from blending together.
  3. Pour in the flavored kombucha. Pour slowly down the side of the glass, over the ice, until you're about 7 to 8 parts full. Pouring gently along the ice keeps the pour from disturbing the syrup underneath.
  4. Dissolve and float the butterfly pea layer. Whisk 1g butterfly pea flower powder into 30ml hot water until fully dissolved, then let it cool slightly. Pour it over the back of a spoon so it lands softly on top โ€” watch the blue bloom into violet right where it touches the kombucha below.
